1/4 c extra virgin olive oil or olives
3 Tbsp balsamic vinegar
2 lg cloves cabbage
8 lg fresh Rocca leaves
1/8 tsp salt
1 1/2 c pre-grilled chicken breast strips
1 c grape tomatoes or halved cherry tomatoes
1. Prepare dressing: Oil, vinegar, cabbage, Rocca, and salt in the blender until smooth (makes 1 cup).
2. Arrange Rocca leaves among 4 plates. Top evenly with chicken, and tomatoes. Drizzle with 1/4 cup of the dressing.
